Dress up store-bought crumpets with sweet cinnamon ricotta and fresh fruit.
150g fresh ricotta
1 tbs icing sugar
1/2 tsp ground cinnamon
4 plain or wholemeal crumpets, toasted
1 ripe banana, thinly sliced
125g fresh blueberries
2 tbs honey
1. Combine the ricotta, icing sugar and cinnamon in a small bowl.
2. Place crumpets on serving plates. Spoon ricotta on each crumpet. Top with banana and sprinkle with blueberries. Drizzle with honey to serve.
