A spicy and tangy tomato Saar or curry recipe prepared by grinding together garlic, ginger, chillies and coconut then adding to the tomato puree. This hot and spicy tomato Saar or tomato rasam can be enjoyed as soup or with steamed rice as main course dish.
1. In a hot boiling water add roughly chopped tomatoes, green chillies, coriander leaves, curry leaves with stock and leave it. 2. Take mortar and pestle add coriander seeds, peppercorns, cumin seeds and crush it. 3. Now transfer crushed spices into the boiling mixture and mix it. 4. Then add turmeric, hing, salt and mix it. 5. Leave it 20min for boiling. 6. Take bhendi on to the chopping board and cut into thin slices of diagonal shape. 7. Transfer into a plate and leave it for 15min for drying purpose. 8. Then sprinkle some salt, rice flour, red chilli powder, water, sesame seeds and mix it lightly. 9. Transfer bhendi into the hot deep fry oil and fry it. 10. Then transfer into a plate. 11. Repeat the same process for other batches. 12. After 20min switch off the flame 13. Then transfer into the stainer and take out the liquid in to a bowl. 14. Remove the solid tomato pieces. 15. Take solid tomato pieces into jar and make it a paste. 16. In a hot vessel (container) add ghee, mustard seeds, cumin seeds, red chillies, curry leaves, hing and saute it. 17. Now add the liquid and paste of the tomatoes into the vessel. 18. Then add water, grated coconut, sugar, chopped pineapple and simmer it. 19. Switch off the flame then add lime juice, chopped coriander leaves and leave it. 20. In a bowl add mashed rice, ghee and mix it well. 21. Then transfer rice in the middle of a serving plate. 22. Pour the tomato saar into the serving plate. 23. Place the fried bhendi on top of the rice in serving plate. 24. Garnish with coriander leaves and grated coconut. 25. Now Tomato saar with crispy bhendi is ready to serve.
